One Pot Pasta

Macaroni in Marinara

Ingredients:

Hello guys!! Hope you are having a good day!
So here is my easy peasy one pot macaroni in red sauce.
This is not how they make pasta in red sauce traditionally, but this is how I do it sometimes.
Here goes

Pasta – 2 cups ( I used macaroni here, you can use your favorite pasta)
Tomato – 2 medium sized
Bell peppers diced – 1 cup (any color you like, I used green and red ones)
Zucchini diced – 1 cup
Broccoli florets – 1/2 cup
Garlic – 4 cloves
Vegan/Vegetarian Parmesan cheese – the more the better 😉
Olive oil – 2 tbspn
Vegetable stock/water – as required
Tomato ketchup -2 tbspn
Red chilly sauce – 2 tbspn
For seasoning: Salt, Garlic powder, Italian seasoning, Red chilly flakes, basil  and black pepper powder

Process:


Puree the tomatoes and keep aside.

In a pan add in Olive oil and let it heat.

After the oil is hot add in the minced garlic and the veggies one by one.

Saute it till the veggies are semi cooked.

Then add in the tomato puree to the same pan and let it boil.

Add some tomato ketchup and red chilly sauce

After it starts boiling add in your pasta and let it cook.

As the pasta is cooking add in the seasoning one by one.

In the meantime check if the pasta is cooked as per your preference.

See to it that there is enough liquid left in the pan for the pasta to cook properly. If you feel like adding in additional liquid like vegetable stock or water feel free to add it a little quantity at a time.

Stir in the parmesan cheese.

Check for the seasoning and serve.
A little tip: if you find that your pasta is little bit watery for your liking, you can add in corn starch slurry to thicken the sauce.

Hey guys!
Hope you all had an amazing deepavali weekend!
I had a blast!! (pun intended :p )
After having a nice Deepavali feast with so many sweets you would be wanting to take a break from all those gulab jamuns and ladoos or you might still be continuing to host/attend deepavali parties!
Either way here is a chatpata quick healthy recipe which you can put together quickly. Spicy tangy mung beans chat with a twist!
This makes for a lovely party snack.

Ingredients:

Whole mung beans – 1cup
Red onion – 1 medium
Plum Tomato – 1 large
Carrot – 1/4 cup shredded
Cilantro/Parsley- 1/4 cup
Mini tart shells – 10-12
Lime juice – 1 tbspn
Mint Cilantro chutney – 2tbspn
Tamarind chutney – 1 tbsp
Fine sev for garnish
For seasoning – Salt, black salt, Chaat masala

Preparation:

Soak the whole mung beans/ green gram in enough water for about 8 hours or overnight (recommended).

Finely chop onion, tomatoand cilantro and add it into the soaked moong beans.
Add in the shredded carrots.

Squeeze in the lime juice.

Mix in the mint-cilantro chutney (green chutney) and tamarind chutney (sweet and sour chutney).

Season it with salt, black salt and Chaat masala.
Mix all the ingredients thoroughly.
Season it just before serving.

Now add the chatpata mixture in the tart shells and top it off with some sev and serve immediately.

Scrambled Bread

SCRAMBLED BREAD
Or some people also call it Bread uppittu/bread upma.
We like it here in our house. It’s easy and comforting and tasty.
Without further ado here is the recipe

Ingredients:
Bread slices  – 15
Red Onion – 1 medium sized
Tomato – 2  medium sized
Curry leaves – 4-6
Oil – 4 tbspn
Black mustard seeds – 1 tspn
Cumin seeds – 1 tspn
Asafoeteda – a pinch
Turmeric powder – 1 tspn
Split black lentils/urad dal – 1tspn
Salt – for seasoning
Paprika/Red chilly powder – for seasoning

Process:

Break down the bread slices to 1/1 inch pieces either by the help of a knife or just by tearing them with your hands.

In a pan add in the oil and let it heat.
Add in mustard seeds, cumin seeds, split black lentils (urad dal) and Asafoeteda and temper them.

Now add in chopped onion and curry leaves. Saute it till the onions sweat a little bit.
Add a pinch of salt so that the onions cook faster.
After the onions are cooked, add turmeric powder and paprika/red chilly powder.
Now add in the chopped tomatoes and let them cook through completely.

Stir in the bread pieces until the bread is completely coated in the masala.

Taste and adjust the seasoning.

Serve and enjoy.

You can have this dish as your breakfast or anytime you feel like having it.
